Ascorbic acid is found naturally in fresh fruits and vegetables such as oranges, grapefruits, broccoli, brussel sprouts, and tomatoes. Ascorbic acid is generally recognized as safe (GRAS) as chemical nutrient for humans, dietary supplement in food and drinks, perservative in foods, antioxidant and pH control in personal care products and cosmetics, and industrial/manufacturing uses such as; developing agent and preservative in photo production, water purification to remove taste of iodine in sterilized water, fluorescence marker in cell biology, chemical reaction in plastic manufacturing, and reduction agent in various plating processes. Ascorbic acid is used in the following markets as:

Food and Beverages

- fortified fruit juices, cereals, dried fruits, frozen fruits for flavour
- preservative to keep bread, cured meats , jams and jelles from spoiling
- reduce nitrites in meats and preserve the colour of the meat
- curing agent in meat processing to inhibit nitrosamine formation
- in fresh wheat flour to improve baking quality
- maturation of fresh wheat flour by 4 to 8 weeks faster after milling
- dough strengthening effect to prevent dough collapse during fermentation
- protection from enzymatic browning in processed fruits and vegetables
- retardation of oxidative rancidity for fats and oils

- pH control of personal care/cosmetic products by less acidic forms of ascorbic
acid; calcium ascorbate, magnesium ascorbate, sodium ascorbate, and
sodium ascorbyl phosphate.
